Abstract
Actualmente se siguen entregando alimentos en muchos vuelos (SKYTRAX, 2011), la Seguridad Alimentaria mundial sigue sin resolverse, la mayoría de residuos de los vuelos internacionales son alimentos y las aerolíneas en Colombia están obligadas a incinerarlos –aunque la regulación permita otras opciones–: por esto, se buscaron alternativas para tomar mejores decisiones con criterios técnicos, comprendiendo al ambiente sistémicamente (Morin, 1998), observando variables culturales (González, 1996), a los actores involucrados y a la regulación relacionada, estudiando procedimientos asociados, y poniendo a prueba estos alimentos y sus excedentes bajo criterios de peligrosidad. Se comprobó que, en condiciones normales, estos excedentes no necesariamente son peligrosos, y se podría aprovechar mejor su “costo de oportunidad” (Field, 1995).Ambiente y Desarrollo is registered under a Creative Commons Attribution 4.0 International Public License.
