Abstract
Se caracterizó el sistema productivo de Oxalis tuberosa, Ullucus tuberosus y Tropaeolum tuberosum en la provincia Sugamuxi, Boyacá. Mediante muestreo aleatorio, encuestas, entrevistas y diagnóstico rural se estableció que las zonas productoras presentan limitaciones para la agricultura, 84,4% de la producción se destina para el autoconsumo, 46,8% de los productores son adultos mayores mientras que los jóvenes no se interesan por el cultivo; 72% de los encuestados en centros de consumo no identificaron los tubérculos y, a pesar del arraigo cultural y social (tradición) por parte de los adultos mayores, se evidenció riesgo de pérdida de estas especies. Contrario a esta tendencia, en la República de Nueva Zelanda se incrementa la demanda y se fomenta el mejoramiento genético.
