Abstract
Las enfermedades transmitidas por los alimentos constituyen una afectación grave para la salud
del consumidor y la imagen de los restaurantes. Por tal razón, el presente trabajo tuvo como
objetivo gestionar la calidad sanitaria e inocuidad de los alimentos en un restaurante servicio
bufet de la ciudad de La Habana, Cuba. Para ello, se evaluó el cumplimiento de las buenas prácticas
de elaboración de alimentos mediante la aplicación de varias herramientas, como la Guía
para la Evaluación Sanitaria de Establecimientos de Alojamiento Turístico y el Perfil Sanitario.
Además, se determinó, por medio de encuestas, el grado de conocimiento de los manipuladores
y miembros de la brigada de limpieza y desinfección en las temáticas de higiene y manipulación
de alimentos. A partir del diagnóstico desarrollado, el 55% de las deficiencias encontradas fu
eron
solucionadas y se logró una evolución en el conocimiento sobre higiene y manipulación
de alimentos, del personal.
